Caesar Roasted Chickpea Salad


1 green bell pepper

¼ small red onion

3 cups chickpeas

1 cup pancetta, cubed

1 tsp salt

1 cup Yo Mama’s Caesar Dressing




  1. Slice bell pepper into thin strips and set side
  2. Slice red onion and set aside
  3. Set the chickpeas and pancetta on a baking tray and season with salt. Gently mix
  4. Bake at 400F for 30 minutes
  5. Out of the oven, pour chickpeas and pancetta into a salad bowl
  6. Top with bell pepper, red onion and Yo Mama’s Caesar Dressing. Mix until evenly coated in dressing. 
  7. Enjoy!
