Fusilli Green Goddess Pasta

Ingredients

Dressing

1 1/4 cups basil leaves

1 cup baby spinach leaves

½ cup sour cream

1/3 cup nutritional yeast or grated Parmesan cheese

Juice of two lemons

1/4 cup olive oil

2 cloves garlic

1 teaspoon salt, plus more to taste

1/2 teaspoon freshly ground black pepper

Salad

1 package Yo Mama Fusilli

1 pound asparagus, cut into 1” pieces, optionally blanched

1 coup fresh peas, optionally blanched

1 bunch scallions, sliced

Instructions

  1. Cook the pasta according to the package directions. Drain and rinse with cold water.
  2. Add all the dressing ingredients to a blender and blend until smooth.
  3. In a large bowl, toss the pasta, vegetables, and dressing.
