Greek Potato Salad


2 cups red and yellow baby potatoes 

¼ cup sliced red onion

¼ cup capers

1 tbsp fresh dill

1 tsp dried parsley 

¼ tsp salt

¼ tsp black pepper

¼ lemon, juice

¼ cup Yo Mama’s Greek Dressing

2 heaping tbsp tzatziki



  1. Boil potatoes until fork tender
  2. Strain potatoes and place in a large salad bowl
  3. To the potatoes, add sliced red onion, capers, dill, parsley, salt, pepper and lemon juice 
  4. Top with ¼ cup Yo Mama’s Greek dressing 
  5. Toss potato salad until evenly coated in dressing 
  6. Fold in tzatziki sauce to coat salad
  7. Enjoy!
