Roasted Butternut Squash Pasta



2 cups butternut squash, cubed 

1 tsp salt

1 tsp pepper

2 tbsp olive oil

½ cup pecans

⅓ cup pine nuts

400g of butternut squash pasta or your pasta of choice 

1.5 cups Yo Mama’s Ranch Dressing

2 tbsp goat cheese




  1. In a bowl, season the butternut squash with salt and pepper
  2. Drizzle with olive oil and mix thoroughly
  3. Place the squash onto a baking tray and add in the pecans and pine nuts
  4. Roast at 400F for 30 mins 
  5. While the squash is roasting, boil the pasta in salted water until al dente
  6. Place the cooked pasta into a serving bowl 
  7. Top the pasta with the roasted squash and nuts and drizzle with Yo Mama’s Ranch Dressing 
  8. Toss the pasta until it’s evenly coated in sauce 
  9. Top the pasta with goat cheese
  10. Enjoy!
